Garlic and Red Vinegar Dressing

Ingredients:
10-12 cloves of garlic, minced,
1 cup + 2 tbsp red wine vinegar,
2 eggs,
1/2 cup fresh green herbs (parsley, basil, dill) chopped,
Salt and pepper.

Method:
In a medium-sized bowl, beat the eggs, then add salt, garlic and 2 tbsp vinegar. Whisk together until smooth. Pour in
some olive oil and keep whisking till the dressing thickens, add remaining olive oil and vinegar. Blend in the fresh
herbs and pepper. This dressing can be preserved for few days in an airtight bottle.
