Crackling Spinach (Chinese)

Ingredients:
4 cups Spinach (Palak) leaves; washed, pat dry and chopped,
2-3 tsp Sesame seeds (White Til),
2 tbsp chopped garlic
Salt to taste,
1 tbsp sugar,
1 tsp paprika or red chilli flakes,
Oil for deep frying,
1 tbsp sesame oil (optional).

Method:
Heat sufficient oil for deep frying the spinach in a wok on medium flame and add spinach leaves and deep fry till they are crisp. Do not fry until the leaves change their color. Remove and drain on paper towels.
Heat a griddle, add 1/2 tsp of oil and roast the sesame seeds for a few minutes on a low flame.
Heat sesame oil in a pan, add chopped garlic and red chilli flakes. After 30 seconds add the fried spinach. Mix lightly and sprinkle salt, sugar and roasted sesame seeds. Toss well and serve hot.
