Sweet Coconut Ghavan

Ingredients:
1 cup rice,
1 cup freshly grated coconut,
1/2 cup jaggery,
Ghee,
Water.

Method:
Wash rice twice and spread on a cloth and let it dry completely in shade. Then grind this rice to powder (not very fine). Add water to make a thin paste but of pouring consistency. Heat a non-stick pan, apply ghee or oil to grease and spread the batter to form a round ghavan. Meanwhile mix coconut and jaggery together. When the ghavan starts leaving its side from the edges of the griddle / pan, spread the coconut mixture on one side of the ghavan and fold the other side over it. Let it cook for 2 more minutes, so that the jaggery melts and gives nice flavor to the ghavan. Serve hot with sweetened coconut milk.
