Spinach Manchurian

This recipe is my innovation. I keep thinking about recipes that are delicious but healthy as well. This recipe could be categorized as specially for kids, since usually they do not want to eat green leafy vegetables. So for all those troubled moms here is a creative recipe. 

Ingredients:
For the manchurian balls-
1 cup spinach leaves; chopped,
1/2 cup cabbage; finely shredded,
Salt and pepper to taste,
1/2 tsp finely chopped green chillies (if you like),
1 tsp soy sauce,
Cornflour as required for binding,
Oil for frying.

For the sauce-
1/2 cup chopped greens of scallions (spring onions),
2 scallions; finely chopped,
1 green chilli; deseeded and slit lenghtwise,
1 tbsp cornflour,
1 1/2 tbsp dark soy sauce,
1 tsp chilli sauce,
Salt and pepper to taste,
Olive oil,
Water.

 Spinach Manchurian

Method:
Mix together all the ingredients for the manchurian balls and knead well. Make small round balls. Heat oil in a wok for deep frying, lower the flame to low-medium and then drop these balls into the oil in batches. Fry till they turn reddish-golden in color, drain and set aside.
To prepare the sauce-
Heat olive oil in a skillet, add scallions and fry for a minute. Then add the greens, chilli and again saute for 2 minutes. Now add soy sauce, chilli sauce, salt, pepper, water (enough to form a thin gravy) and let it boil. Meanwhile mix cornflour in 1/2 cup water to form a paste and pour into the gravy. Keep stirring. Soon the gravy would start thickening, then drop the manchurian balls into it, cover and put off the flame. Serve with boiled noodles or steamed rice.

Greek Vegetable Salad

Ingredients:
1 large cucumber; chopped,
2 plum tomatoes; chopped,
5-6 black Greek olives; pitted and sliced,
1 cup Feta Cheese; crumbled,
1 red onion; halved and thinly sliced,
Romaine Lettuce leaves; torn into bite-size pieces,

For the dressing-
2 tbsp olive oil,
2 tsp lemon juice,
1 tsp dried oregano,
1 tsp Balsamic vinegar,
Salt and pepper to taste.

Method:
Mix together all the ingredients of dressing. Mix together all the other ingredients except cheese. Then add the dressing to the vegetables and sprinkle cheese and serve.

Broccoli Mushroom Babycorn Salad

Ingredients:
100 gms broccoli; cut into florets and blanched,
100 gms mushrooms; sliced and blanched,
100 gms babycorn; blanched,
Few cilantro leaves,
Few parsley sprigs,
Few lettuce leaves.

For the dressing-
1 cup thick hung curd,
1 tbsp finely chopped/minced garlic,
1 tbsp fresh cream,
Salt and pepper to taste,
1 tsp finely chopped cilantro.

Method:
Mix together all the ingredients of dressing and whisk well. In a mixing bowl, combine broccoli, mushrooms and babycorn and pour the dressing over it as required. Mix well. In a serving bowl, arrange the lettuce leaves, transfer the tossed salad, garnish with cilantro leaves and parsley. Serve immediately or chilled.

Banana Split

Ingredients:
2 ripe but firm bananas; each split in two,
1 scoop each vanilla, chocolate and strawberry ice cream, (or any syrup of your choice)
Chocolate, Raspberry and Strawberry syrup as per taste, (or any syrup of your choice)
Whipped cream,
Sliced nuts,
Cherries to garnish.

Other-
Shallow dessert dish.

Method:
Arrange the bananas in the dessert dish. Place the ice cream scoops over them in a row. Then top with flavored syrups, each scoop with a different flavor. Now top with plenty of whipped cream. Garnish with nuts and cherries. You can again top it with your favorite syrup if you like. Serve immediately before the ice cream melts!

Egg Fried Rice

Ingredients:
2 cups cooked rice,
2 eggs,
5 scallions with the greens; chopped,
1 1/2 tbsp dark soy sauce,
Salt and pepper to taste,
Oil for frying.

Method:
Beat the eggs in a bowl. Add salt and pepper and whisk. Heat little oil in a pan. Pour the eggs into the pan. Cook stirring to scramble them. When cooked remove from the pan. In the same pan add little more oil and then saute the onions for few minutes on low flame. Then add soy sauce, salt, pepper and mix well. Add in the rice, stir properly so that it is coated well with the onions and seasonings. Add the scrambled eggs, stir fry for few minutes and then serve hot.
