Orange Mousse

Ingredients:
1 cup orange juice,
1/2 cup cream; whipped till light and fluffy,
1/2 cup milk,
2 egg yolks,
3 tbsp gelatin,
1/2 cup water,
1/2 cup sugar,
Orange rind and mixed nuts to garnish.

Method:
Dissolve gelation in water. Beat the egg yolks, add milk and sugar to it. Add this mixture to a saucepan and place on low flame. Cook till it thickens. Then slowly add gelatin to it. Stir and cook for a minute. Remove from flame and let it cool slightly. Then add orange juice and cream to it and stir well. Then fill it in the pastry bag. Fill small cups with the mousse and chill in the refrigerator for 2-3 hours. Top with some orange rind and nuts before serving.
