Coconut Drop Cookies - Christmas Cookies

Ho! Ho! As Christmas is approaching its time to prepare our favorite cookies, cakes and so many goodies. Here is an all time favorite coconut drop cookie recipes. 

Ingredients: (Makes around 4 dozen cookies)
3 cups all-purpose flour,
3 cups shredded or dessicated coconut,
1 1/2 cup powdered sugar,
2 tbsp white butter (unsalted),
2 egg; beaten,
A pinch of salt.
1 tsp vanilla essence,
1 flat tsp baking powder.

Method:
Sift flour and baking powder. In a bowl beat white butter and salt till creamy. To it add beaten eggs and whisk well. Add half of dessicated coconut, mix again. Now add vanilla essence, mix and then fold in flour.
Preheat 180 degree C (360 degree F) for 15 minutes. Then make very small balls, dust them in the dessicated coconut to coat them well. Place on a greased cookie sheet or baking tray at a distance of 1 1/2 inches, giving them space to bake. Bake for 15 minutes or till cookies turn nice brown, at the same temperature.

Waffles

Ingredients:
2 cups all-purpose flour,
3 tsp baking powder,
A pinch of salt,
3-4 tbsp sugar,
2 large eggs; beaten,
2 cups milk,
4 tbsp unsalted butter; melted.

Other-
Waffle Iron

Method:
In a mixing bowl sift together flour, salt, baking powder and add sugar, stir well. Pour the beaten egg to the flour mixture and fold well to that no lumps are formed. Add the melted butter and give it a nice stir.
Depending upon the instructions on your waffle machine, grease it with butter. Pour a large spoonful of batter or as recommended by the machine’s instructions, on one side of the iron. Close the lid and bake as per instructions till the waffle is nice crisp and brown in color. Serve hot with whipped cream and chocolate sauce.

Cream Cheese Cake

Ingredients:
350gms unsalted butter; softened,
250gms cream cheese; softened,
330gms all-purpose flour,
330gms sugar,
6 eggs,
1 1/2 tbsp vanilla extract,
Confectioner’s sugar for coating.

Method:
Preheat the oven to 160 degrees C or 325 degrees F for for 10 minutes. In a large mixing bowl, cream together butter and cream cheese until smooth. Add in the flour and sugar and mix well until soft and fluffy. Beat eggs in another bowl and then slowly add them to the cheese mixture little at a time and beating well each time. Add the vanilla extract and fold again. Grease a 9″ baking tray and pour the prepared batter into it evenly. Bake at the same temperature for 45 minutes or until a fork/toothpick inserted in the center of the cake comes out easily and clean. When done remove from the oven, cool and then invert into the confectioner’s sugar and dust well.

Strawberry Tart topped with Meringue

Ingredients:
For the pastry/tart-
1 cup all-purpose flour,
1/2 cup unsalted butter,
Little less than 1/2 cup of sugar,
3 egg yolks,
30 gms fresh yeast.

For the filling-
1/2 cup strawberry jam,
2 cups fresh strawberries; sliced.

For the Meringue-
3 egg whites,
1/2 cup sugar.

Method:
To prepare the tart crust-
Sift the flour. Cut and fold the butter into the flour like we do it for pie dough. Then fold in sugar and yeast. Beat the egg yolks till creamy and then combine it in the flour mixture. Knead lightly to form a dough.
Meanwhile preheat the oven at 175 degrees C or 350 degrees F. Spread the dough evenly on a 9″ pie plate, spread a little melted butter over it and bake for 10 minutes. Remove from the oven.

To fill the tart-
Spread a layer of jam over the warm tart crust, spread starwberry slices. In a bowl beat/whip the egg white till they stiffen. Then add the sugar and beat till it is creamy. Spread this layer of meringue on the strawberries and then bake at 170 degrees C or 300 degrees F for 30 minutes.
Remove from oven, cut into desired size pieces and serve.

Mushroom, Bacon and Onion Pie

Ingredients:
2 9″ pie crusts,
1 cup sliced sweet onions,
1 cup sliced mushrooms; blanched,
4-6 slices of bacon,
Shredded cheese as per taste,
Salt and pepper to taste,
Butter.

Method:
Preheat the oven to 200 degrees C or 400 degrees F for few minutes.
Melt butter in a skillet and fry bacon till it is cooked and crisp. Season with some salt and pepper. Drain and keep aside. In the same skillet saute the onions and mushrooms for some time. Season with salt and pepper, remove and set aside.
Now place one pie crust into a deep pie dish. Then place a layer of the onions, mushrooms and bacon. Top with cheese, season with salt and pepper and then place another crust over it and seal properly. Prick the upper crust with a fork to let the steam escape. Now place it in the oven and bake for around 40 minutes or till you see the crust has become brown. Remove and let it cool. Serve.
