Chicken Ranch Wraps

Ingredients:
4 boneless chicken breasts,
4 flour tortillas or bread,
1/4 cup ranch salad dressing,
1/2 cup yogurt,
1/2 cup water,
Salt to taste,
Dry herbs as per taste,
Flour to coat as needed,
1 cup shredded lettuce leaves,
1 tomato; diced,
Oil for frying,
Mayonnaise or tomato ketchup as per taste, (optional)
White cheddar cheese; grated. (optional)

Method:
If you do not want you chicken to be fried then heat a griddle and saute the chicken (shredded) with salt and herbs in very less oil till chicken is cooked. Then fold it with the dressing.
If you like fried chicken in your wraps then combine yogurt, water, salt, herbs and beat well. Then dip the chicken breasts into this for some time. Later coat each piece with flour. Heat oil for frying and fry the chicken evenly from both sides till it turns brown. Drain and shred it. Blend it with the dressing.

To prepare the wraps, warm the tortilla, spread mayonnaise or ketchup on the inner side if you like. Then place the filling in the center of the tortilla, sprinkle some cheese on top and fold properly to seal the wrap. Cover with cling film until ready to serve. While serving cut diagonally into two pieces.

Spinach and Mushroom Quiche

Ingredients: (Serves 2)
5 ounce frozen spinach (drained and thawed) or 2 cups fresh spinach leaves,
Mushroom slices as per taste,
1/2 cup chopped scallions (only white) or red onions,
3 eggs,
150gms shredded cheese (ricotta, mozarella, parmesan, cheddar or other),
2 tsp butter,
Salt and pepper to taste,
9″ pie pan or a baking dish.

Method:
Preheat the oven to 175 degrees C (350 degrees F).
Melt the butter in a pan/skillet and saute the onions, mushrooms and spinach until they are soft and cooked. In a bowl, beat the eggs, add salt and pepper. Then fold in the vegetables and cheese and whisk well. Grease the pie pan or baking dish. Then pour this mixture into the dish and spread properly. Then bake the quiche at the same temperature for around 25 minutes or till you see the crust has turned brown and the egg does not bubble any more. When done let it cool and then cut into pieces and serve in breakfast alongwith fruits or juice.

TIPS:
1. For calories watchers - Reduce the quantity of cheese and replace with low fat cheese.
2. You can add or replace with any vegetables and meat of your choice.

Potato Toast

Ingredients:
2 slices of brown or white bread,
1 large potato, boiled, peeled and mashed,
1 green chilli, finely chopped,
2 tbsp chopped greens of spring onion,
1 tbsp chopped coriander leaves,
1 tbsp chopped onion,
2 tbsp cornflour, (for binding),
1 egg,
Salt and pepper to taste,
Sesame seeds for coating,
Oil for frying.

Method:
Beat the egg in a bowl, add some salt and pepper and beat well. Spread some sesame seeds on a plate. Heat around 1/2 cup oil in a frying pan. Cut each bread slice into two triangles. Mix all the other ingredients in a bowl and knead it into a soft dough. Divide this dough into 4 portions and spread each portion on the bread pieces. Then dip each piece in the egg and then in the sesame seeds and fry in the oil from both sides till it turns golden and crisp. Serve potato toast with sweet chilli sauce.

Omelette Wrap

Ingredients:
4 eggs,
4 small potatoes; boiled, peeled and mashed,
1 onion; finely chopped,
1 small tomato; finely chopped,
1/2 tsp red chilli powder,
1/2 tsp pav-bhaji masala,
1/2 tsp garam masala powder,
Salt to taste,
Oil for frying,
Water.

Method:
Heat little oil in a pan, add onions and tomatoes and fry stirring occasionally for few minutes till they turn soft. Then add red chilli powder, garam masala and pav-bhaji masala and mix well. Let it fry for 2 minutes. Now add mashed potatoes, mix and add little water, cover with lid and simmer for 2 minutes. Then remove from flame and set aside till the omelettes are prepared.
Now beat 2 eggs at a time, add a pinch of salt. Heat a non-stick pan, add little butter or oil if you like else you can omit it, pour the egg and hold the handle of the pan and shake it to spread the egg evenly on the pan. When the egg is cooked from one side, flip over to the other side. Now scoop a spoonful of potato mixture and spread it over the omelette. Then wrap the omelette to form a nice thick roll. Prepare the other omelette similarly and serve with tomato ketchup.

British Pancakes

Ingredients:
100gms plain flour,
A pinch of salt,
200ml milk,
50ml water,
2 eggs,
50gms unsalted butter,
Caster sugar and lemon juice to top.

Method:
Sift together flour and salt in a mixing bowl. Then make a hole in the centre of the flour and drop eggs into it. Using a whisk or fork start blending together the mixture. At this
point of time, you may find many lumps in the mixture but do not worry. Mix milk and water and then gradually pour it into the flour mixture. Use your whisk and stir continuously. Soon you would find the lumps have disappeared.
Heat a griddle on medium flame, grease it with little butter if you like. Drop a spoonful of batter at a time and spread it evenly in circular motion to make a round pancake. When the pancake is cooked, it starts leaving the base of the griddle, check if the color of the pancake is golden and then flip it over and let it be for few seconds. Remove from flame and sprinkle some caster sugar and lemon juice over them while serving.
