Pasta Carbonara

Ingredients: Serves 2
1/2  packet Whole wheat spaghetti
2 onions; chopped,
4-5 cloves garlic, chopped,
2 boneless and skinless chicken breasts, (or Ham or bacon if you like),
2 eggs; beaten,
8-10 peppercorns; crushed,
1/4 cup grated Parmesan cheese,
1-2 tbsp chopped fresh parsley,
Salt to taste,
Olive oil.

Method:
Boil water and cook the spaghetti into the pan and add 1 tbsp oil to it. Or follow the instructions given on the packet.

Heat 2 tbsp olive oil in a pan and add the chopped onions to it. Add garlic and let it fry for few minutes. Add the chicken chunks and let them cook till tender. Season with salt.
Drain the spaghetti and transfer in to the serving dish. Whisk the eggs with pepper and pour into the spaghetti. Then add the spaghetti to the chicken and mix well. Remove from flame and add parsley and grated cheese.

Penne with Sausage and Tomatoes

This pasta recipe is very simple and can be made in minutes since no baking is required.

Ingredients:
17 ounces (1 pound or approx 500gms) penne paste,
8 Italian hot sausages,
2 tbsp olive oil,
2 medium onions; chopped,
1 tbsp minced garlic,
1/4 tsp red chilli/pepper flakes,
1/4 cup fresh basil leaves; chopped,
17 ounce (500 gms) whole Italian plum tomatoes; chopped,
15 ounces (400 gms) tomato paste or puree,
1/2 cup red wine,
Salt and freshly ground black pepper to taste,
Grated Parmesan or Ricotta cheese,
Sliced Olives (optional).

Penne with Sausage and Tomatoes 

Method:
In a heavy bottom pan, heat a tbsp of oil and fry the sausages till they turn pinkish-brown in color. Break them using fork while frying. Drain and remove from the pan. In the same pan add more oil and saute the onion till it turns transparent. Add the chopped tomatoes and tomato paste, let this mixture simmer till it thickens. Sprinkle red chilli flakes, basil leaves, wine, give it a stir and cook till wine is absorbed.
Meanwhile cook the pasta with little salt as per instructions on the package, till al dente. Drain well and transfer to a large mxing bowl. Pour the sauce over it and mix well. Sprinkle some salt and pepper, olives and top with lots of cheese.

Chili Spaghetti

Ingredients:
1 packet (7 ounces) spaghetti,
2 small onions; diced,
2 cups tomato paste,
2 tsp red chilli powder,
1 tsp salt,
3/4 cup grated cheese of your choice,
1 1/2 pound mince, (any meat of your choice)
Salt to taste

Method:
Cook the spaghetti as per instructions given on the package. Meanwhile heat little oil in a pan and saute onions till soft. Then add tomato paste, chilli powder and salt, mix well and then add the mince. Cover and cook till mince is cooked. Uncover and cook till the sauce thickens. Then pour over spaghetti and sprinkle cheese on top.

Spaghetti in Balsamic Cream Sauce

Ingredients:
2 tbsp olive oil,
2 tbsp balsamic vinegar,
1 cup thick cream,
1/4 onion; ground,
2-3 garlic cloves; minced,
2 tsp chicken bouillon powdered (chicken cubes),
1/2 cup grated Parmesan Cheese,
2 cups cooked spaghetti.

Method:
Heat olive oil in a saucepan and add onion. Saute till it is dark brown in color. Then add garlic, balsamic vinegar, cook for a minute. Then sprinkle the chicken bouillon and fold in cream. Simmer for 5 minutes and then remove from heat. Add Parmesan cheese, mix well till it melts. Serve on the spaghetti.

Red Pasta Sauce

Ingredients:
2 tomatoes; finely chopped,
1/2 cup tomato sauce or puree,
1 small green or red bell pepper (capsicum); very finely chopped,
1 onion; finely chopped,
3 cloves garlic; minced,
1 tsp oregano,
1 tsp dried parsley,
1 tsp dry basil,
1/4 tsp paprika or red chilli flakes,
1/2 tsp cayyene pepper,
2 tbsp Olive oil,
Salt to taste.

Method:
Heat oil in a pan. Add minced garlic and fry till fragrant. Then add onion and then saute till soft (on low-medium flame). Add tomatoes and peppers and cook till peppers are soft. Then add all the seasonings and mix well. Add the tomato puree, mix and cover and cook on low flame for 15 minutes. Uncover and stir occasionally. Serve with your favorite pasta.
