Egg Bhurji(II)

Ingredients:
4 eggs, hard boiled,
2 onions, finely chopped,
1 small tomato, finely chopped,
7-8 curry leaves,
1/2 tsp turmeric powder,
1/2 tsp red chilli powder,
3/4 tsp garam masala powder,
Salt to taste,
Oil for frying.

Method:
In a kadhai, heat 3 tbsp of oil add curry leaves and saute chopped onions till they turn transparent. Then add turmeric powder, red chilli powder and mix well. Add chopped tomatoes and cook till they turn soft. Meanwhile cut boiled eggs into small pieces. Add some salt and garam masala to the onion-tomato mixture. Fry for some time and add the pieces of egg and mix well. Serve hot with pav and ketchup or even with dal-rice.

Egg Bhurji(I)

Ingredients:
4 eggs,
2 onions, finely chopped,
1 large tomato, finely chopped,
1 small green chilli, deseeded and finely chopped,
1/2 tsp turmeric powder,
1/2 tsp red chilli powder,
Salt to taste,
Oil for frying.

Method:
In a kadhai, heat 3 tbsp of oil and saute chopped onions till they turn transparent. Then add green chilli, turmeric powder, red chilli powder and mix well. Add chopped tomatoes and cook till they turn soft. Meanwhile beat eggs in a bowl. Add some salt to the onion-tomato mixture. Now pour in the beaten eggs to the kadhai and keep mixing. Increase the flame to medium and cook bhurji till eggs are fully cooked mixing continuously. Using spoon break the large pieces of egg into fine pieces if you like.
Serve hot with pav and ketchup.

Paneer Bhurji

Ingredients:
250gms paneer, grated or crushed,
150g bell pepper, finely chopped,
1 big onion, finely chopped,
1 big tomato, finely chopped,
2 green chillies, finely chopped,
1/2 teaspoon cumin seeds,
1/2 teaspoon mustard seeds,
1/2 teaspoon turmeric powder,
1 teaspoon coriander powder,
Salt to taste,
2-3 tbsp cooking oil.

Method:
Heat oil in a large frying pan over a medium flame. When hot, put in the mustard seeds and cumin seeds.  When they splutter add the onion, stir and fry until starting to brown. Add the peppers, chillies and tomatoesand stir well. Put the lid on and let it cook for 5-7 minutes. When the pepper is almost cooked and the mixture is rather dry, add the paneer, coriander powder and turmeric powder. Stir it and cook for two minutes. Add salt and mix well. Take it off the stove and transfer to a serving bowl. Garnish with green coriander leaves. Serve hot with parathas.

Tofu Bhurji (Soyabean Paneer Bhurji)

Ingredients:
200 gms Soya Paneer/Tofu, grated,
1 medium onion, diced,
1 medium tomatos, finely chopped,
1/2 cup chopped coriander leaves,
1 tbsp chopped pudina(mint) leaves,
1/4 tsp turmeric powder,
1/2 tsp red chilli powder,
1 green chilli, finely chopped,
2 tsp lemon juice,
Oil,
Salt to taste.

Method:
Heat oil in a pan/kadhai/wok. Add onion and saute till soft. Add green chillies and tomatoes, fry for a minute and then add turmeric powder, red chilli powder, mix well and cook for 2 minutes. Add grated soya paneer, mix well, add chopped coriander leaves and cover and cook for another 5 minutes. Remove lid, increase the flame to high, add pudina and lemon juice and cook till all the water dries up.
Serve hot with parathas.

Palak Paneer Bhurji (Spinach Cottage Cheese vegetable)

Ingredients:
250-300gms Palak leaves, chopped corasely,
100-150 gms paneer, coarsely crushed,
7-8 cloves garlic, crushed,
1 onion, finely chopped,
1 tomato, chopped,
1 green chilli, finely chopped,
1 tsp jeera powder,
2 tsp coriander powder,
1/2 tsp turmeric powder,
1/2 tsp red chilli powder,
Salt to taste,
Butter and Oil for frying.

Method:
In a pan, heat some butter and add crushed garlic, saute for a minute and add chopped palak leaves. Mix and cook till palak gets cooked retaining the cool green colour. When done, remove palak from heat and set aside. In the same/another pan heat some oil and add the chopped tomatoes. Cover and cook till they soften. Then add jeera and coriander powder to it, mix well and cook till all the mixture thickens. Remove from heat and add to the palak and keep aside. In the pan, add some butter and some oil and add onion. Saute for 2 minutes, add green chillies, turmeric powder, red chilli powder, salt and mix well. Now add the palak and tomato mixture to it. In the end add the crushed paneer, mix well cook for some time and serve hot with parathas.
