Irish Stew

Ingredients:
1/2 kg red meat (mutton); washed and chopped,
75gms onions; sliced,
75gms potatoes; sliced,
2″ piece ginger; sliced,
4 small green chillies; deseeded and chopped,
1/2 tsp black pepper powder,
2 tbsp butter/ghee,
2 tbsp maida (refined wheat flour),
250ml milk,
3 cups water,
Salt to taste.

Method:
Add onions, potatoes, 1″ ginger slices, black pepper powder, salt and 3 cups water to the meat and cook till meat is tender and soft (around 45 minutes). In a pan, heat butter add chillies, remaining ginger slices and flour and roast on low-medium flame till it turns light brown. Pour milk and keep stirring so that no lumps are formed and bring to boil. Then add the cooked meat along with all the juices, mix cook for some more time and then serve with your favorite bread.

Red Pasta Sauce

Ingredients:
2 tomatoes; finely chopped,
1/2 cup tomato sauce or puree,
1 small green or red bell pepper (capsicum); very finely chopped,
1 onion; finely chopped,
3 cloves garlic; minced,
1 tsp oregano,
1 tsp dried parsley,
1 tsp dry basil,
1/4 tsp paprika or red chilli flakes,
1/2 tsp cayyene pepper,
2 tbsp Olive oil,
Salt to taste.

Method:
Heat oil in a pan. Add minced garlic and fry till fragrant. Then add onion and then saute till soft (on low-medium flame). Add tomatoes and peppers and cook till peppers are soft. Then add all the seasonings and mix well. Add the tomato puree, mix and cover and cook on low flame for 15 minutes. Uncover and stir occasionally. Serve with your favorite pasta.

Pasta in Alfredo Sauce

Ingredients:
1/2 cup unsalted butter,
2 cups heavy cream; whipped,
3/4 cup grated Parmesan cheese,
1/2 cup mozzarella cheese,
1/2 tsp white pepper,
Salt to taste.

To serve-
10 ounces or 300gms Fettuccini or Angel Hair pasta; cooked.

Method:
In a saucepan melt the butter. Reduce the flame to low and add cream, cheese, salt and pepper and keep stirring till the sauce is smooth but do not let it boil. Remove and combine your favorite pasta and serve.

British Pancakes

Ingredients:
100gms plain flour,
A pinch of salt,
200ml milk,
50ml water,
2 eggs,
50gms unsalted butter,
Caster sugar and lemon juice to top.

Method:
Sift together flour and salt in a mixing bowl. Then make a hole in the centre of the flour and drop eggs into it. Using a whisk or fork start blending together the mixture. At this
point of time, you may find many lumps in the mixture but do not worry. Mix milk and water and then gradually pour it into the flour mixture. Use your whisk and stir continuously. Soon you would find the lumps have disappeared.
Heat a griddle on medium flame, grease it with little butter if you like. Drop a spoonful of batter at a time and spread it evenly in circular motion to make a round pancake. When the pancake is cooked, it starts leaving the base of the griddle, check if the color of the pancake is golden and then flip it over and let it be for few seconds. Remove from flame and sprinkle some caster sugar and lemon juice over them while serving.

Chicken with Mushroom Sauce

Ingredients:
250 gms chicken,
2 tbsp cornflour,
1/4 cup mushrooms; blanched and ground to paste,
1/4 tsp oregano,
Freshly ground peppercorns as per taste,
Salt to taste,
Olive oil for frying.

To garnish-
Peas, baby potatoes and beans; boiled.

Method:
Marinate chicken with lemon juice and salt for some time. Then boil this chicken till it is tender.
Add cornflour to a pan, and add water enough to make a sauce and mix till smooth and no lumps. Put on flame and boil stirring. Then add mushroom paste and mix well till the sauce thickens. Then add freshly ground pepper, mix and set aside.
Saute boiled chicken in olive oil, add salt, pepper, oregano and fry till it is light brown.
In a serving dish arrange the sauted chicken on one side, pour in the mushroom sauce over it. Then arrange blanched beans, baby potatoes, boiled peas and serve.

TIP:
You can also prepare the recipe without frying the chicken if you want to lower your calorie intake and enjoy chicken.
