Chicken with Mushroom Sauce

Ingredients:
250 gms chicken,
2 tbsp cornflour,
1/4 cup mushrooms; blanched and ground to paste,
1/4 tsp oregano,
Freshly ground peppercorns as per taste,
Salt to taste,
Olive oil for frying.

To garnish-
Peas, baby potatoes and beans; boiled.

Method:
Marinate chicken with lemon juice and salt for some time. Then boil this chicken till it is tender.
Add cornflour to a pan, and add water enough to make a sauce and mix till smooth and no lumps. Put on flame and boil stirring. Then add mushroom paste and mix well till the sauce thickens. Then add freshly ground pepper, mix and set aside.
Saute boiled chicken in olive oil, add salt, pepper, oregano and fry till it is light brown.
In a serving dish arrange the sauted chicken on one side, pour in the mushroom sauce over it. Then arrange blanched beans, baby potatoes, boiled peas and serve.

TIP:
You can also prepare the recipe without frying the chicken if you want to lower your calorie intake and enjoy chicken.

Crackling Chicken

Ingredients:
1 kg boneless, skinless chicken pieces,
1 egg,
3/4 cup bottled fat-free creamy Italian salad dressing,
1 tsp dried Italian seasoning,
2 cups crushed reduced-fat butter crackers or Italian bread crumbs,
1/3 cup finely chopped pecans,
1/4 cup grated Parmesan cheese,
1/2 tsp garlic salt,
1 tsp chopped parsley.

Method:
In a bowl beat the egg, add salad dressing, Italian seasoning and mix well. Add the chicken tenders to this and mix well to coat the chicken with the dressing. Marinate chicken for 1 to 2 hours, preferably in a refrigerator. Preheat oven to 350 degrees. Spray a large cookie sheet with some olive oil. In a plate, mix together crushed crackers or bread crumbs, pecans, Parmesan cheese, Italian seasoning, garlic salt, and parsley flakes. Pick the chicken pieces and roll them in cracker crumb mixture. Place chicken on prepared cookie sheet. Bake for 25 to 30 minutes or until golden brown. Serve with your favorite dipping sauce.

Spanish Lentil Stew

Ingredients:
1 cup split udad dal with skin, soaked for few hours,
1 cup red lentils (masur dal) soaked for few hours,
1 large onion, chopped,
5-6 garlic cloves, chopped,
2 small tomatoes, chopped,
2 carrots, peeled and sliced,
2 potatoes, peeled and thinly sliced,
1 green pepper (capsicum) deseeded and chopped,
5 chicken sausages, chopped into little pieces,
Paprika or red chilli powder to taste,
1/2 lemon,
1 bay leaf,
2-3 cloves,
Salt to taste,
Olive oil for frying,
Water.

Method:
Heat olive oil in a pan, put onions and garlic and fry them for a minute. Then add all the chopped vegetables and saute for 2 minutes. Add the soaked lentils and mix well. Cook for few minutes and then add the chicken pieces. Saute for 3-4 minutes and add enough water to cover the lentils. Sprinkle salt and squeeze lemon juice. Add a bay leaf and cloves. Cover and cook for around 40 minutes. Serve this stew with crusty or toasted bread.

Smoked Salmon topped with Honey and Teriyaki sauce

Ingredients:
10 Smoked salmon slices,
15-20 spinach leaves,
6-7 cloves of garlic, chopped,
Black salt and pepper to taste,
1/2 tsp orange rind,
Lots of Gouda Cheese,
Olive oil.
For the sauce-
1/2 cup honey,
1/2 cup teriyaki,
1/4 cup lichee juice.

Method:
Heat a tbsp of olive oil in a pan, add the chopped garlic and spinach leaves to it. Saute for 2 minutes. Add in the orange rind, some black salt and pepper. Mix well, remove from flame and cool it. In a saucepan, mix honey, teriyaki, lichee juice and then bring to boil. Continue to stir till it reduces to a thick sauce. Now arrange the slices of smoked salmon on a plate, then arrange spinach over them, top with some cheese, sprinkle some salt and pepper over it, and roll them. Pour the honey and teriyaki sauce over it and serve.

Green Chilli Salsa

Ingredients:
1 large tomato, chopped,
1 green chilli, chopped,
1 small onion, chopped,
1/2 tsp garlic salt*,
A pinch of freshly ground pepper,
1 tsp freshly chopped cilantro or coriander,
1/2 tsp lime juice.

Method:
In a mixing bowl combine all the ingredients and allow to marinate for 30 minutes or more, so that all the flavors blend well. Serve with tacos, tortillas or corn chips.

* If you dont have garlic salt, use 2 cloves of garlic - minced and salt.
