Spanish Omelette

Ingredients:
4 eggs;
3 small potatoes; thinly sliced
1 small onion; thinly sliced,
3-4 cloves of garlic; crushed,
1/2 cup blanched mushrooms, (optional)
Few spinach leaves; blanched coarsely chopped, (optional)
Salt to taste,
1/2 cup olive oil.

Method:
Heat some oil in a heavy bottom pan, add potato slices to it. Sprinkle some salt and cook from both sides by flipping over till they are cooked. Add onion slices and cook till they are soft too. Then add garlic, mushrooms and spinach and saute well. Beat eggs and add salt to taste. Add more oil to the pan if needed and let it heat. Then pour the mixture into the pan, stir to coat the veggies or hold the handle of the pan and shake well. Cover and let it cook from bottom on low flame. Pour some oil from the sides of the pan and then flip over. Let it cook and then remove in a serving plate. Cut into equal size slices and serve.

Egg and Bacon Fried rice

Ingredients:
1 cup cooked rice,
4 eggs, beaten with little salt,
1 cup bacon; diced,
1/4 cup finely chopped garlic,
1/4 cup finely chopped ginger,
1/2 cup scallions,
Chinese cooking wine as per taste
Chinese soy sauce as per taste,
Olive oil.

Method:
Heat oil in a wok and then pour the eggs into it. Stir with the spoon and shred it while cooking. Drain and remove the egg from the wok. In the same wok add garlic, ginger and scallions Let this cook en add the bacon, wine, soy sauce, salt and keep mixing. Cook till bacon is tender. Then add the egg shreds and cooked rice and mix well. Cook for 2 minutes and then remove from flame. Serve hot.

TIP:
Replace bacon with any other meat of you choice like chicken.

Omelette Wrap

Ingredients:
4 eggs,
4 small potatoes; boiled, peeled and mashed,
1 onion; finely chopped,
1 small tomato; finely chopped,
1/2 tsp red chilli powder,
1/2 tsp pav-bhaji masala,
1/2 tsp garam masala powder,
Salt to taste,
Oil for frying,
Water.

Method:
Heat little oil in a pan, add onions and tomatoes and fry stirring occasionally for few minutes till they turn soft. Then add red chilli powder, garam masala and pav-bhaji masala and mix well. Let it fry for 2 minutes. Now add mashed potatoes, mix and add little water, cover with lid and simmer for 2 minutes. Then remove from flame and set aside till the omelettes are prepared.
Now beat 2 eggs at a time, add a pinch of salt. Heat a non-stick pan, add little butter or oil if you like else you can omit it, pour the egg and hold the handle of the pan and shake it to spread the egg evenly on the pan. When the egg is cooked from one side, flip over to the other side. Now scoop a spoonful of potato mixture and spread it over the omelette. Then wrap the omelette to form a nice thick roll. Prepare the other omelette similarly and serve with tomato ketchup.

Poached Eggs with warm Green Salad

Ingredients:
For the salad-
2 eggs,
Shitake mushrooms,
1/2 cup of chopped scallions (spring onions),
7 Lettuce leaves,
Bell peppers as per taste,
1 apple; diced,
1/2 cup sugar,
Slices of ham as per taste,
Salt and pepper to taste.

For the dressing-
1/2 cup olive oil,
A handful of chopped scallions,
Salt and pepper to taste,
1 tsp lime juice,
1 tbsp Dijon mustard.

Other-
1/2 cup vinegar,
Water.

Method:
Boil water in a deep pan and put 1/2 cup vinegar into it. To poach the eggs, break open an egg in a large deep spoon, season it with salt and pepper. Dip the spoon in the boiling water, poach it and remove. In a pan, add apples and sugar and cook till they caramelize.
Arrange lettuce leaves, scallions, peppers in a salad bowl, place the poached eggs, some ham and the caramelized apples.
For the dressing, heat olive oil in a pan, add spring onions, mushrooms, salt, pepper, lime juice, dijon mustard, mix and pour it on the salad.

Indonesian Omelette

Ingredients:
4 eggs,
2 tbsp oil
1 small onion; chopped.
6 cloves garlic; crushed,
1 small tomato; chopped,
2 tbsp dark soy sauce,
1/2 cup ham; chopped,
1/2 cup tofu; chopped,
2 tbsp spring onions; chopped,
A dash of chilli,
Little water,
Olive oil.

Method:
Beat the eggs in a bowl. To them add ham, tofu, spring onions, chilli, salt and pepper to them, mix well.
Heat a pan, add oil and onion and garlic and saute for few minutes, add tomatoes, soy sauce and water and cook. Put a tbsp of olive oil on a pan, grease well, drop a spoonful of egg mixture and spread well, let it cook from one side, flip
over and cook from the other side. Serve with the sauce.
