Ingredients:
100gms Egg Noodles,
1/4 cup water,
2 tbsp soy sauce,
1 tsp vinegar,
1 tsp sugar,
1 tsp cornflour,
1 tbsp vegetable oil,
2 spring onions (sliced) with the greens(chopped),
1 clove garlic, finely chopped,
1/2 tsp ginger, finely chopped.
Method:
Prepare egg noodles according to the directions given on the packet.(Else boil 5 cups of water, put a pinch of salt and some oil while boiling, and drop in the noodles. Cook them till they are soft and drain in a colander. Run through cold water and toss in some oil to avoid them from sticking)
In a bowl mix water, soy sauce, vinegar, sugar and cornstarch together until the sugar and cornflour are dissolved. Set aside.
Heat oil in a wok(kadhai) or deep skillet(frying pan) on high flame. Add the spring onions, garlic and ginger and stir until the garlic and ginger are fragrant, approxiamtely for about half a minute.
Add noodles and toss with this mixture. Stir in the soy sauce mixture and pour into the wok. Mix well until the sauce is thick and evenly distributed in the noodles. Serve hot with your choice of sauce.
