Ingredients:
1 litre milk,
1/3 cup rice,
1/4 cup figs; chopped,
1/4 cup dates; deseeded and chopped,
A pinch of saffron,
1/4 cup honey,
1/2 tsp ground cardamom,
Sliced almonds, pistachios and cashew nuts to garnish.
Method:
Wash and soak the rice for 1/2 an hour. Put milk in a heavy bottom pan and boil it till it reduces to half of the original quantity. Then add drained rice and cook fo 15 minutes on low flame. Then add figs, dates, saffron and cook stirring occasionally till the pudding thickens. Add honey and cardamom just before taking off from fire. Stir and serve hot or chilled.
