Ingredients:
1 big baingan(eggplant),
1 tbsp. oil
1 large onion, finely chopped,
1 large tomato, finely chopped,
2 tbsp whole groundnuts,
1/2 tsp turmeric powder,
1 tsp. red chilli powder,
1 tsp. salt or to taste
Chopped coriander
Method:
Cook the baingan(eggplant) either on the stove or if you do no like the smoky smell cook it in the microwave after piercing with a fork until done. You can also roast it in an oven. Once cooked peel off the skin and mash well.
In a kadhai (wok)heat oil and fry the roundnuts for some time. Then add chopped onions and saute till they turn transparent. Add turmeric powder and red chilli powder, fry for a minute and add tomatoes. Cook till tomatoes turn soft.Add salt and the mashed baingan. Mix well and garnish with chopped coriander leaves.
