Ingredients:
4 slices of bread (brown or white)
1 big onion; finely chopped,
1 tsp rai,
1/2 tsp turmeric,
2 tbsp roasted groundnut coarsely ground,
1 green chilly, deseeded and chopped finely,
1/2 cup chopped coriander,
9-10 curry leaves,
Salt and sugar to taste
2 tbsp Oil for frying,
Method:
Make very small pieces of the bread slices, or lightly crush or mince the slices in a food processor.
In a kadhai, heat the oil, and add rai. Let it splutter, then add the curry leaves and onion. Fry onion till it becomes transparent. (Do not turn them brown, to reatain their crunchy taste) Now add green chillies, haldi, salt and sugar; fry for a minute. Then add the crushed bread, mix well. Add the ground groundnuts. Cook for a minute by covering the kadhai with a lid or without the lid. If you want the upma to be soft then, sprinkle some water in it before you cover it, also put some water on the lid. But if you want a crispy bread upma then do not add water . Add coriander leaves and serve hot with tomato ketchup or any chutney.
