A Maharashtrian recipe for rava or suji laddus. These laddus are too soft, they melt as soon as you put them into your mouth…Yummmm!
Ingredients:
1 kg rava or suji (semolina),
200gms whole wheat flour,
1/2 kg fine sugar or as per taste,
1/2 kg or more ghee (home made unsalted butter) as per requirement,
2-3 tsp elaichi powder (green cardamom),
Cashewnuts (broken into small pieces) and raisins as per choice.
Method:
Heat a pan on medium flame, put 2-3 tbsp ghee, lower the flame and when it melts add rava to it. Roast this rava strictly on low flame till it is fragrant. In another pan, dry roast wheat flour on low flame. When done, mix together both these ingredients and allow to cool. Melt the ghee in a small pan. Then add sugar, elaichi powder, cashewnuts, raisins and add melted ghee to the suji and wheat flour mixture. The quantity of ghee needs to be increased depending upon the consistency of the mixture, to be able to roll laddus comfortably. Make small lemon sized laddus. These laddus are really soft and very delicious.
