Egg Sukha is an Indian (Maharashtrian) style stir fried egg with onions, mild flavor of curry leaves and green chillies. Made of few ingredients, this recipe is easy and can be made quickly. Kids will too love it. All in all a healthy and tasty preparation.
Ingredients:
4 eggs; hard-boiled, peeled and diced,
1 large onion; finely diced,
Few curry leaves,
2 green chillies; finely chopped,
1/2 tsp turmeric powder,
Salt to taste,
Oil for frying,
Chopped coriander leaves to garnish (optional).
Method:
Heat oil (more than normal) in a kadhai. Add onion, green chillies and curry leaves and saute on low-medium flame till onion is transparent. Then add turmeric powder and stir. Now add diced egg, season with some salt and stir. Cover and cook for few minutes. Garnish with coriander leaves if you like and serve hot with chapatis or dal-rice.
