Ingredients:
1/2 kg of meat (mutton); chopped,
100gms okra (bhindi or ladies finger); tips and end cut off,
2 onions; halved and sliced,
1 tbsp ginger-garlic paste,
1/2 tsp turmeric powder,
1 tsp red chilli powder,
1/2 cup thin tamarind paste,
3 tbsp yogurt/curd,
1/2 tsp garam masala,
Salt to taste,
Chopped coriander leaves to garnish,
Oil for frying,
Water for gravy.
Method:
Heat some oil in a pan, add okra to it and lightly fry them till they change color and then take them off the flame, drain and set them aside.
Then some more oil in the same pan, add onions and keep stirring till they turn light brown. Then add ginger-garlic paste, turmeric, red chilli powder, salt and fry for 2 minutes. Then add 1/2 cup water and then the mutton, saute it in the masala for 5-7 minutes. Then add more water as per the requirement. Then add 1/2 cup of tamarind paste, 3 tbsp yogurt. Cover and cook till mutton is almost cooked for almost 30 minutes. Then add the okras and again cook for 10 minutes. Then uncover and add garam masala, chopped green coriander, mix and serve.
