A quick cauliflower recipe, sauted in yogurt and spices.
Ingredients:
2 cups cauliflower florets (gobhi),
1 cup thick yogurt (curd),
1 1/2 tbsp besan (gramflour),
3/4 tsp ginger-garlic paste,
1/4 tsp turmeric powder,
1/2 tsp red chilli powder,
1/2 tsp tandoori masala (or garam masala),
1/2 tsp chat masala,
Salt to taste,
2-3 tbsp Oil for frying,
1/2 tsp kasoori methi (dry fenugreek leaves).
Method:
Boil 3 cups water with little salt and add the cauliflower florets to it. Boil on medium flame for 5 minutes or until cauliflower is cooked. But do not overcook. Drain and set aside.
In a mixing bowl mix together all the ingredients except oil and kasoori methi. Add the cauliflower florets to this mixture and stir well.
Heat oil in a pan and add this mixture to it. Fry it on medium flame stirring occasionaly until yogurt dries up and cauliflower turns golden in color. Sprinkle crushed kasoori methi and remove from flame. Mix and serve with parathas or dal and rice.
