Ingredients:
2 cups pineapple juice,
1 tbsp butter,
2 eggs,
2 tbsp sugar,
Few leaves of basil.
Method:
In a saucepan, add pineapple juice, butter and sugar and put on a medium flame. After few minutes add basil and then cook the mixture stirring occasionally for 5 minutes. Separate egg yolks from whites. Beat the egg yolks. Then pour the egg yolks slowly into the pan, whisking continuously into the pineapple mixture. Cook for 2 minutes. Meanwhile whisk the egg whites till stiff (peaks are formed). Now take off the pineapple mixture from flame. Slowly fold the egg white (in portions) into the pineapple mixture. Mix well. Pour into the serving bowls and chill in the refrigerator for an hour. Serve chilled.
