Ingredients:
1 cup sabudana(sago),soaked overnight or for atleast 5-6 hours*,
1 large potato, boiled,peeled and diced,
1 green chilli, deseeded and finely chopped,
1/2 cup roasted groundnut powder,(method given below)
2 tsp jeera,
Salt and sugar to taste,
Ghee for frying,
Chopped coriander leaves,
Water if required.
Method:
Mix soaked sabudana, diced potatoes, green chilli, groundnut powder and salt. In a frying pan, heat 2 tbsp of ghee and add jeera, when it splutters add the sabudana mixture to it and mix well, add sugar and sprikle some water and cover with a lid to cook. Keep checking if sabudana is cooked. Add coriander leaves and server hot with curd.
* Add 1 cup of water to soak 1 cup of sabudana. If the quantity of water is more,it becomes sticky and would be good to use to starch your clothes.
TIPS:
1. Roast whole groundnuts,remove its skin and grind them to coarse powder. This is roasted groundnut powder, and you can store this powder for months and use in different recipes.
2.Add 1/2 cucumber, grated to the khichdi to make it soft.
