Ingredients:
10 slices bread,
1 litre milk,
100gms sweetened condensed milk,
200gms sugar,
Ghee for frying,
1 tsp cardamom powder,
1/4 tsp saffron(dissolved in warm milk),
1 cup sliced dryfruits (Almonds, pistachios, cashewnuts)
Method:
Cut the bread slices diagonally into traingles or any other shape as per your choice. Heat ghee in a deep fry pan and fry the bread slices till they turn golden brown. Blot out the extra ghee on a blotting paper or a kitchen(tissue) paper. Boil milk, add sugar, cardamom powder and dissolved saffron and mix well till sugar dissolves. Pour some milk in a shallow bowl, enough to soak the fried bread slices in it. Soak the bread slices for around 5 minutes. Let the remaining milk be on flame and add condensed milk to it. Mix well till a thick rabdi is formed. In a serving plate, place all the soaked bread slices, pour rabdi over them garnish with the sliced dryfruits.
Tip:
Shahi Tukda has a very high calorie count. So if you want to have a low calorie dessert, avoid condensed milk, use low fat milk and replace sugar with sugar free capsules. Also shallow fry the bread or use bread toast instead.
