Ingredients:
1 cup cake flour,
1 1/2 tsp baking powder,
1/2 tsp salt,
6 eggs, yolk separated from white
1 tsp almond extract,
1/2 tsp vanilla extract or essence,
12 tbsp sugar.
Method:
Sift together flour, baking powder and salt. Preheat the oven to 350 degrees for some time. In a small bowl, put together the egg yolks and beat them forcefully till they become thick. Add almond and vanilla extracts and beat well. Use a blender to beat the egg whites till they become stiff and fluffy. Add sugar, little quantity at a time. Beat again till stiff and then gently fold in the beaten egg with the beaten yolks. Similarly fold in the flour mixture gently using a flat spatula so that no lumps are formed. Spread the baking cookie sheet, drop in a spoonful of mixture and spread to form a round. Leave a good 2 inch space between each cookie, giving them space to bake and expand. Bake in the oven for around 10 minutes, until they turn light golden brown. Remove from the sheet and allow to cool before you serve.
