Ingredients:
100 gms each – french beans, carrots, green bell peppers, cauliflower florets; chopped,
1/2 cup shelled green peas,
1 onion; chopped,
2 tsp wheat flour,
2 tbsp butter,
Salt and black pepper to taste,
1 tsp olive oil for roasting.
For Tomato Garlic Sauce-
1 cup vegetable stock,
2 tbsp lemon juice,
1 cup tomato sauce,
1 tsp ginger-garlic paste,
1-2 green chillies; ground,
2 tbsp corn flour,
Salt and sugar to taste,
1 tsp olive oil.
Method:
To prepare the sauce-
Heat oil in a pan, add ginger-garlic paste and roast lightly. Then add ground chillies, vegetable stock, tomato sauce, salt, sugar and stir. Allow the sauce to simmer. Then mix corn flour with little water to form a paste and stir into the sauce. Pour the lemon juice and then cook till the sauce thickens.
To prepare the vegetables-
Heat oil in a pan and add chopped onion. Saute till onion turns transparent. Then add chopped vegetables, season with salt and pepper, sprinkle flour and then cover and steam them for 5 minutes. Do not add water while cooking, instead reduce all the juices left out by the vegetables while cooking till dry. When done remove from flame and transfer to the serving dish. Top with butter and serve with the sauce.
