Ingredients:
2 cups poha,
1 large onion, chopped,
1 green chilli, finely chopped
9-10 curry leaves,
2 tsp mustard seeds,
2 tbsp groundnuts,
1 tbsp broken cashewnuts,
1/2 tsp turmeric powder,
1/2 cup boiled green peas,
1/2 cup boiled potatoes, peeled and cut into small pieces,
1/2 tsp red chilli powder,
Salt to taste,
Juice of 1/2 lemon,
Oil for frying,
Grated fresh coconut and chopped coriander leaves for garnishing.
Method:
In a kadhai, heat oil and fry groundnuts for a minute and add mustard seeds. Soon as they splutter add chooped onion and curry leaves, saute till onion turns transparent and then add chopped green chilli, cashewnuts, turmeric powder and red chilli powder. Fry for a minute and add boiled green peas and potatoes. Cover and cook for a minute. Meanwhile soak poha in water only enough to make it soft*. Remove the lid, add salt, mix well and then add poha. Mix well and sprinkle water only if required. Cover and let it cook for 2 minutes on low flame. Once cooked remove from heat add the lemon juice mix well and then garnish with grated coconut and chopped coriander leaves.
* If excess water is added lumps are formed.
